Why has this book not been published before?
In order to make this book, there has been almost 1 year of research and sufficient experimentation. Most of the knowledge and recipes came about through Merijn’s practical knowledge that he has gained over the past 7 years. Essentially, subjects and lifestyles such as these are held back as far as possible by the larger players in the food industry. These players have only one goal, and that is: to sell as much as possible (unhealthy) food. Because Merijn wants to offer a good handhold and structured roadmap, sufficient research has first been done on all the topics in the book. Everything you read is therefore substantiated with scientific research in combination with personal experiences. You can understand that this is a time-consuming process, but this only benefits the quality.
